This week Wiki Spanish Food interviews Ángel León, one of the most prestigious chefs in Spain and abroad. He's considered one of the top five in the world by international publication Food & Wine Magazine,  due to his firm focus on putting the sea's many flavors on display at his restaurant Aponiente (Puerto de Santa María, Cádiz).

This Newsletter, our fourth this year, also includes an article about China, where Spanish agri-food imports have increased six-fold in the last five years, at a year-on-year pace of 124%. We also highlight the restaurant chain BaRRa de Pintxos, which is set to open two new locales in Madrid before summer, and the internal battle at Coca-Cola.

In our seasonal products section, we provide an in-depth look at the black truffle, which is collected in forests and subsequently brought to market in winter, and of which there are 60 known varieties, around half of them from Europe.
